Prep time: 10–12 minutes (plus 4–5 minutes to roast makhana if needed)
Cook time: 0–5 minutes (if roasting)

Ingredients

  • 3 cups roasted makhana (fox nuts) — store-bought roasted or homemade
  • 1 small onion, finely chopped
  • 1 medium tomato, deseeded and finely chopped
  • ½ cup cucumber, finely chopped
  • 2 tbsp roasted peanuts (optional)
  • 1–2 tbsp green chutney (adjust to taste)
  • 1 tbsp sweet tamarind chutney (adjust to taste)
  • 1–1½ tsp chaat masala
  • ¼–½ tsp black salt (kala namak) or to taste
  • Juice of ½ lime (or to taste)
  • Handful fresh coriander leaves, chopped
  • Thin sev for garnish (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  • Roast makhana in ½ tsp oil/ghee for 4–5 mins until crisp (if not already roasted) and transfer to a bowl.
  • Chop onion, deseeded tomato, and cucumber; keep chutneys and peanuts ready.
  • Add chopped vegetables and roasted peanuts to the makhana.
  • Season with chaat masala, black salt, salt, and pepper.
  • Add green chutney, sweet chutney, and lime juice.
  • Toss quickly to coat everything evenly.
  • Garnish with coriander and sev.
  • Serve immediately to enjoy maximum crunch.
💡 Tip: Makhana absorbs moisture quickly. For the ultimate crunch, do not add the chutneys or mix the bhel until the absolute last minute before serving!
